  • 15 ml semi-rich sugar syrup 1.5:1 sugar to water
  • 10 ml egg white or the white of 1 small egg
  • 1 dash walnut bitters
  • 1 ice ball

Instructions
 

  • Add the genever, amaretto, lemon juice, semi-rich sugar syrup, egg white, and walnut bitters into a spindle blender.
  • Fill with crushed ice and blend for 15–30 seconds, until smooth, creamy, and frothy.
  • Place a large ice ball into a chilled rocks glass.
  • Strain the blended cocktail over the ice ball.

Notes

Alternatively, you can skip the blender and make this cocktail using a shaker. Just dry shake all the ingredients first to emulsify the egg white, then add ice and shake again until chilled before straining into the glass.
